Ingredients
- Plums — 4-5, pitted and cut into wedges
- 2 tbsp light brown sugar
- 1 tsp ground cinnamon
- 1 1/2 cups all purpose flower
- 1/2 cup cornmeal
- 3/4 cup granulated sugar
- 2 1/2 tsp baking powder
- 1 tsp kosher salt
- 1 stick (8 tbsp) unsalted butter, melted
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup buttermilk
Instructions
- Heat oven to 350°F. Line a round cake pan with parchment and butter the sides and the parchment.
- Sprinkle brown sugar on parchment, layer plums down in a circle around the parchment so there are no open spaces, sprinkle cinnamon on back of plums
- In a large bowl, combine flower, cornmeal, sugar, baking powder, and salt.
- In a separate bowl, combine melted butter (cooled), eggs, vanilla extract, and buttermilk. Whisk until smooth. Add to dry ingredients.
- Spread batter into prepared pan.
- Bake 40-55 minutes, until golden and a tester inserted into cake comes out clean. Cool slightly and serve warm.
