Thai Basil Chicken with Crushed Pineapple

Ingredients

  • 1 lb ground chicken (or turkey)
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 carrot, julienned
  • 1 cup fresh spinach
  • 1 cup crushed pineapple (drained slightly)
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 handful basil leaves
  • 2 cups cooked jasmine rice

Instructions

  1. Sauté garlic, mushrooms, carrots in oil for 3 min.
  2. Add ground chicken, cook until browned (5–6 min).
  3. Stir in pineapple, soy sauce, fish sauce, lime juice. Cook 2–3 min.
  4. Add spinach and basil, wilt gently. Serve over rice.
