Ingredients
- 1 lb ground chicken (or turkey)
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 carrot, julienned
- 1 cup fresh spinach
- 1 cup crushed pineapple (drained slightly)
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 1 handful basil leaves
- 2 cups cooked jasmine rice
Instructions
- Sauté garlic, mushrooms, carrots in oil for 3 min.
- Add ground chicken, cook until browned (5–6 min).
- Stir in pineapple, soy sauce, fish sauce, lime juice. Cook 2–3 min.
- Add spinach and basil, wilt gently. Serve over rice.
