Smoked Paprika & Scallion Cornbread

Ingredients

  • Fine yellow cornmeal — 1 cup
  • All-purpose flour — 3/4 cup
  • Baking powder — 1 tsp
  • Baking soda — 1/2 tsp
  • Kosher salt — 1 tsp
  • Smoked paprika — 1 1/2 tsp
  • Buttermilk — 1 cup
  • Large egg — 1
  • Unsalted butter, melted — 4 Tbsp
  • Scallions — 3, thinly sliced
  • Neutral oil — 1 Tbsp (for the pan)

Instructions

  1. Heat oven to 400°F. Grease an 8-inch pan with oil and preheat the pan.
  2. Whisk dry ingredients (cornmeal, flour, baking powder, baking soda, salt, smoked paprika). In another bowl, whisk buttermilk, egg, and melted butter; fold in scallions.
  3. Combine wet and dry just until no dry spots remain. Scrape into hot pan, smooth, and bake 18–22 minutes until set and golden.
  4. Cool slightly and cut into small squares for serving.
