Ingredients
- Fine yellow cornmeal — 1 cup
- All-purpose flour — 3/4 cup
- Baking powder — 1 tsp
- Baking soda — 1/2 tsp
- Kosher salt — 1 tsp
- Smoked paprika — 1 1/2 tsp
- Buttermilk — 1 cup
- Large egg — 1
- Unsalted butter, melted — 4 Tbsp
- Scallions — 3, thinly sliced
- Neutral oil — 1 Tbsp (for the pan)
Instructions
- Heat oven to 400°F. Grease an 8-inch pan with oil and preheat the pan.
- Whisk dry ingredients (cornmeal, flour, baking powder, baking soda, salt, smoked paprika). In another bowl, whisk buttermilk, egg, and melted butter; fold in scallions.
- Combine wet and dry just until no dry spots remain. Scrape into hot pan, smooth, and bake 18–22 minutes until set and golden.
- Cool slightly and cut into small squares for serving.
