Ingredients
- Fine yellow cornmeal — 1 cup
- All-purpose flour — 3/4 cup
- Baking powder — 1 tsp
- Baking soda — 1/2 tsp
- Kosher salt — 1 tsp
- Buttermilk — 1 cup
- Large egg — 1
- Unsalted butter, melted — 4 Tbsp
- Neutral oil — 1 Tbsp (for the pan)
Instructions
- Heat oven to 400°F. Grease an 8-inch square or 9-inch round pan with 1 Tbsp oil and preheat the pan while you mix the batter.
- Whisk dry ingredients (cornmeal, flour, baking powder, baking soda, salt). In another bowl, whisk buttermilk, egg, and melted butter.
- Fold wet into dry just until combined. Scrape into the hot pan, smooth the top, and bake 18–22 minutes until golden and a tester comes out clean.
- Cool 10 minutes, then cut into small squares for a bread basket.
