Savory Buttermilk Cornbread (Plain)

Ingredients

  • Fine yellow cornmeal — 1 cup
  • All-purpose flour — 3/4 cup
  • Baking powder — 1 tsp
  • Baking soda — 1/2 tsp
  • Kosher salt — 1 tsp
  • Buttermilk — 1 cup
  • Large egg — 1
  • Unsalted butter, melted — 4 Tbsp
  • Neutral oil — 1 Tbsp (for the pan)

Instructions

  1. Heat oven to 400°F. Grease an 8-inch square or 9-inch round pan with 1 Tbsp oil and preheat the pan while you mix the batter.
  2. Whisk dry ingredients (cornmeal, flour, baking powder, baking soda, salt). In another bowl, whisk buttermilk, egg, and melted butter.
  3. Fold wet into dry just until combined. Scrape into the hot pan, smooth the top, and bake 18–22 minutes until golden and a tester comes out clean.
  4. Cool 10 minutes, then cut into small squares for a bread basket.
