One-Pan Salmon with Broccoli & Delicata Squash

Ingredients

  • 4 salmon fillets (about 1 lb)
  • 1 delicata squash, sliced into half-moons
  • 3 cups broccoli florets
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 lemon, sliced
  • Salt, pepper, dill or parsley

Instructions

  1. Preheat oven to 425°F.
  2. Toss broccoli & squash with olive oil, salt, pepper, paprika. Roast 10 min.
  3. Push veggies aside, add salmon. Season with salt, pepper, dill, lemon slices.
  4. Roast 12–14 min until salmon flakes.
