Chicken & Spinach Quesadillas with Corn Salsa

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup spinach, chopped
  • 1 1/2 cups shredded cheese
  • 4 flour tortillas
  • 1 cup corn kernels
  • 1 tomato, diced
  • 1 tbsp lime juice
  • Salt

Instructions

  1. Mix corn, tomato, lime juice, and salt for salsa.
  2. Heat skillet. Add tortilla with cheese, chicken, spinach. Top with another tortilla.
  3. Cook until golden on both sides. Slice into wedges. Serve with salsa.
