Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 3 carrots, cut into sticks
  • 3 small potatoes, cut into wedges
  • 2 cloves garlic, smashed
  • 1 tbsp olive oil
  • 1 tsp paprika
  • Salt & pepper

Instructions

  1. Preheat oven to 425°F.
  2. Sear chicken skin-side down in hot cast iron until golden (5 min). Flip.
  3. Add carrots, potatoes, garlic. Season with paprika, salt, pepper.
  4. Transfer to oven and roast 18–20 min until chicken is 165°F.
