Ingredients
- 4 bone-in, skin-on chicken thighs
- 3 carrots, cut into sticks
- 3 small potatoes, cut into wedges
- 2 cloves garlic, smashed
- 1 tbsp olive oil
- 1 tsp paprika
- Salt & pepper
Instructions
- Preheat oven to 425°F.
- Sear chicken skin-side down in hot cast iron until golden (5 min). Flip.
- Add carrots, potatoes, garlic. Season with paprika, salt, pepper.
- Transfer to oven and roast 18–20 min until chicken is 165°F.
